It was over 80 degrees in Denver this past Saturday, giving me hope that Summer is on the horizon! One of my favorite things about the warmer seasons is all of the fresh produce thats available, including fruit, veggies and herbs. Today I’m sharing a super simple, yet elegant, Summer recipe that you can use as a refreshing appetizer to kick off a meal, or as it’s own small plate if you’re hosting tapas-style. I hope you enjoy these Watermelon, Basil & Feta Bites as much as I do!
– Fresh Watermelon
– Fresh Basil
– Feta Chunk
– Cracked Black Pepper
– Organic Olive Oil
– Cut up the fresh watermelon into about 1 inch x 1/2 inch chunks. Set aside.
– Slice the feta chunks into about the same size.
– To start creating the bites, stack one piece of watermelon, a few sprigs of fresh basil, and one piece of feta onto a skewer using a toothpick or other skewer of your choice.
– Once all skewers are complete, drizzle with organic olive oil and sprinkle with fresh cracked black pepper.
